Air Fryer Turkish Lamb Kofta

Spiced ground lamb koftas air-fried until browned and juicy, served with cooling yogurt and warm pita bread for an easy Turkish-style dinner.

Ingredients
- 600 g ground lamb
- 1 onion, grated and drained
- 3 garlic, minced
- 3 tbsp fresh parsley, finely chopped
- 1½ tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 200 g plain yogurt, to serve
- 4 pita bread, warmed, to serve

Method

Mix the lamb kofta — In a large bowl, combine the ground lamb, grated onion, garlic, parsley, cumin, ground coriander, paprika, salt, and black pepper. Mix with your hands until well combined but not overworked.

Shape and chill the koftas — Divide the mixture into 12 portions and shape each into an oval kofta around a skewer, or freeform if you prefer. Chill for 10 minutes to help them hold their shape.

Arrange in the air fryer — Preheat the air fryer to 200°C. Arrange the koftas in a single layer in the basket, leaving space between them for even cooking.

Air fry until cooked through — Air fry at 200°C for 10-12 minutes, turning halfway through, until browned all over and cooked through with no pink remaining inside.

Serve with yogurt and pita — Serve the koftas hot with a dollop of yogurt and warm pita bread on the side.
