Method

    Trim the fennel bulbs — Preheat the oven to 200°C (400°F). Trim the fennel bulbs, reserving any feathery fronds for garnish, and cut each bulb lengthwise into quarters.

    Season the fennel — Arrange the fennel quarters in a single layer in a baking dish. Drizzle with olive oil, scatter over the garlic, season with salt and black pepper, and toss to coat evenly.

    Bake the fennel covered — Pour the vegetable stock around the fennel, cover the dish tightly with foil, and bake for 25 minutes until the fennel is tender when pierced with a knife.

    Bake uncovered with Parmesan — Remove the foil, sprinkle the fennel with grated Parmesan, thyme leaves and lemon zest, and return to the oven uncovered for 12–15 minutes, until golden and bubbling.

    Rest and serve the gratin — Let rest for 5 minutes, scatter with the reserved fennel fronds, and serve warm as a side dish.
