Banh Mi Op La (Fried Egg Banh Mi)

A crusty baguette filled with sunny-side-up eggs, crunchy pickled vegetables, cucumber, and fresh herbs — a beloved vegetarian Vietnamese breakfast sandwich.

Ingredients
- 4 baguette
- 8 egg
- 2 tbsp vegetable oil
- 4 tbsp mayonnaise
- 1 tbsp soy sauce
- 1 cucumber, sliced into strips
- 150 g pickled daikon and carrot
- 1 fresh chilli, sliced
- 4 tbsp fresh cilantro
- black pepper to taste
- salt to taste

Method
- 1.
Toast and spread the baguettes — Split the baguettes lengthwise and toast lightly. Spread mayonnaise inside each one.

Fry the eggs — Heat the vegetable oil in a pan over medium heat and fry the eggs sunny-side up for about 4 minutes, until the whites are set but the yolks stay runny. Season with salt and pepper.

Fill and serve the banh mi — Fill each baguette with two fried eggs, cucumber strips, pickled daikon and carrot, chilli, and cilantro. Drizzle with soy sauce and serve immediately.
