Banh Mi Thit Nuong (Grilled Pork Banh Mi)

A crusty baguette piled with smoky grilled pork, tangy pickled vegetables, fresh cucumber, chilli, and herbs for the classic Vietnamese sandwich.

Ingredients
- 500 g pork tenderloin, thinly sliced
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp honey
- 3 garlic, minced
- 1 shallot, minced
- 1 tsp sesame oil
- 4 baguette
- 4 tbsp mayonnaise
- 1 cucumber, sliced into strips
- 150 g pickled daikon and carrot
- 1 fresh chilli, sliced
- 4 tbsp fresh cilantro
- 1 tbsp soy sauce, for drizzling

Method

Marinate the pork — Whisk together the fish sauce, soy sauce, honey, garlic, shallot, and sesame oil. Toss with the sliced pork and marinate for at least 20 minutes.

Grill the pork — Grill the marinated pork over high heat for about 10 minutes, turning once, until charred at the edges and cooked through.

Toast the baguettes — Split the baguettes lengthwise and toast lightly. Spread mayonnaise inside each one.

Fill and serve — Fill each baguette with grilled pork, cucumber strips, pickled daikon and carrot, chilli, and cilantro. Drizzle with a little soy sauce and serve.
