Cacık (Turkish Yogurt & Cucumber Dip)

A cooling, garlicky yogurt dip loaded with grated cucumber, fresh dill and mint, finished with a swirl of olive oil for a refreshing start to any Turkish meal.

Ingredients
- 500 g Greek yogurt
- 2 cucumber, grated
- 2 garlic, crushed
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh mint, chopped
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp water

Method

Drain the cucumber — Grate the cucumbers on the coarse side of a box grater, then place in a sieve and sprinkle with a pinch of salt. Let them drain for 10 minutes, pressing gently to release the excess liquid.

Whisk the yogurt base — In a bowl, whisk the yogurt with the crushed garlic, olive oil and water until smooth and slightly loosened.

Fold in the herbs — Fold the drained cucumber, dill and mint into the yogurt mixture. Season with black pepper and additional salt to taste.

Chill and serve — Cover and chill for at least 30 minutes so the flavors come together. Serve cold, drizzled with a little extra olive oil, alongside flatbread or as a side to grilled meats.
