Cheese Omelette

A soft, buttery three-egg omelette folded around melting cheddar and fresh chives. Ready in five minutes flat.

Ingredients
- 3 egg
- 1 tbsp butter
- 50 g cheddar, grated
- 1 tbsp fresh chives, chopped
- salt to taste
- black pepper to taste

Method

Whisk the eggs — Crack the eggs into a bowl, season with salt and pepper, and beat with a fork until fully blended and slightly frothy.

Heat the butter — Melt the butter in a non-stick pan over medium heat until foaming but not browned, about 1 minute.

Cook the omelette — Pour in the eggs. As they set at the edges, drag them to the centre with a spatula and tilt the pan to let the raw egg flow underneath. Cook for about 2 minutes until just set but still soft on top.

Fill and fold — Scatter the cheddar and chives over one half, fold the omelette over, and slide onto a plate. Serve at once.
