Chicken Satay Skewers

Smoky grilled chicken skewers marinated in coconut curry spices, served with a rich, tangy peanut dipping sauce. A Thai street food favorite.

Ingredients
- 600 g chicken breast, cut into thin strips
- 3 tbsp soy sauce
- 2 tbsp coconut milk
- 1 tbsp curry powder
- 1 tbsp brown sugar
- 2 garlic, minced
- 1 tsp ground turmeric
- 150 g peanut butter
- 1 tbsp lime juice
- 1 tsp chilli flakes
- 1 dl water

Method

Marinate the chicken — In a bowl, mix the soy sauce, coconut milk, curry powder, brown sugar, garlic, and turmeric. Add the chicken strips and toss to coat, then marinate for at least 15 minutes.

Thread the skewers — Thread the marinated chicken strips onto the soaked skewers, weaving back and forth.

Grill the skewers — Grill the skewers over medium-high heat for 8-10 minutes, turning occasionally, until charred at the edges and cooked through.

Make the peanut sauce — Meanwhile, whisk the peanut butter, lime juice, chili flakes, and water in a small saucepan over low heat for 3 minutes until smooth and pourable. Serve the skewers with the peanut sauce for dipping.
