Chicken Tikka Skewers

Tender chicken cubes marinated in spiced yogurt and grilled over open flame until charred and juicy, an Indian favorite bursting with smoky flavor.

Ingredients
- 700 g chicken thigh, cut into cubes
- 200 g plain yogurt
- 2 tbsp vegetable oil
- 1 tbsp lemon juice
- 1 tbsp fresh ginger, grated
- 3 garlic, minced
- 1 tsp garam masala
- 1 tsp ground turmeric
- 1 tsp smoked paprika
- 1 tsp chilli powder
- 1 tsp salt
- 1 lemon, cut into wedges

Method

Whisk the tikka marinade — In a large bowl, whisk together the yogurt, 1 tbsp vegetable oil, lemon juice, ginger, garlic, garam masala, turmeric, smoked paprika, chili powder and salt to make a thick marinade.

Marinate the chicken — Add the chicken cubes to the marinade and toss well to coat. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

Thread the chicken skewers — Thread the marinated chicken cubes onto skewers, leaving a little space between each piece for even cooking. Brush the grill grates with the remaining oil and preheat to medium-high.

Grill until charred and cooked — Grill the skewers, turning every few minutes, for 10-12 minutes until charred at the edges and cooked through with no pink remaining inside.
- 5.
Rest and serve the skewers — Rest the skewers for a couple of minutes, then serve hot with lemon wedges for squeezing.
