Chocolate Lava Cake

Individual dark chocolate cakes with set edges and a molten, flowing centre that spills out at the first spoonful. Restaurant-level in fifteen minutes.

Ingredients
- 150 g dark chocolate
- 120 g butter
- 3 egg
- 80 g white sugar
- 50 g wheat flour
- 1 pinch salt
- 2 tbsp cocoa powder
- 1 tsp butter, for greasing

Method

Prep the ramekins — Heat the oven to 200C. Grease four ramekins with butter and dust with cocoa powder, tapping out the excess.

Melt the chocolate and butter — Melt the chocolate and butter together gently until smooth, then let cool slightly.
- 3.
Whisk and fold the batter — Whisk the eggs with the sugar until pale, then fold in the melted chocolate, the flour, and the salt until just combined.
- 4.
Bake and serve at once — Divide the batter among the ramekins and bake for 11 to 12 minutes until the edges are set but the centres still jiggle. Turn out and serve at once.
