Chocolate Sprinkle Butter Cookies

Buttery vanilla cookies rolled in crunchy chocolate sprinkles and dipped in melted dark chocolate — a classic Nordic bakery treat.

Ingredients
- 230 g butter, softened
- 150 g white sugar
- 1 egg
- 1 tsp vanilla extract
- 350 g wheat flour
- 1 tsp baking powder
- 1 pinch salt
- 100 g chocolate sprinkles
- 50 g dark chocolate, melted, for dipping

Method

Cream the butter and sugar — In a large bowl, cream the softened butter and white sugar together until light and fluffy.

Beat in egg and vanilla — Beat in the egg and vanilla extract until well combined.

Fold in the dry mix — In a separate bowl, whisk together the flour, baking powder and salt, then fold into the butter mixture to form a soft dough.

Roll balls in sprinkles — Roll the dough into small balls, then roll each ball generously in the chocolate sprinkles to coat completely.

Flatten on the tray — Place the balls on a lined baking tray, spaced apart, and flatten each slightly with your palm.

Bake and cool the cookies — Bake at 180°C for 12-14 minutes until the edges are just golden. Let cool completely on a wire rack.

Dip in melted chocolate — Once cooled, dip half of each cookie into the melted dark chocolate and let set before serving.
