Classic Apple Sauce Spice Cake

A moist, old-fashioned spice cake made rich with apple sauce, warm cinnamon and cloves, studded with raisins and walnuts.

Ingredients
- 300 g wheat flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- ½ tsp salt
- 120 g butter, softened
- 200 g brown sugar
- 2 egg
- 4¾ dl apple sauce
- 150 g raisins
- 100 g walnuts, chopped

Method

Prep the baking pan — Preheat the oven to 175°C (350°F). Grease and flour a bundt or loaf pan.

Whisk the dry ingredients — In a bowl, whisk together the wheat flour, baking soda, cinnamon, cloves, nutmeg and salt.

Cream butter and sugar — In a large bowl, cream the butter and brown sugar until light and fluffy, then beat in the eggs one at a time.

Fold in the dry mix — Stir the apple sauce into the butter mixture, then fold in the dry ingredients until just combined.
- 5.
Fold in raisins and walnuts — Fold in the raisins and chopped walnuts, then pour the batter into the prepared pan.
- 6.
Bake and cool the cake — Bake for 50-55 minutes, until a skewer inserted in the center comes out clean. Cool in the pan for 15 minutes before turning out onto a rack.
