Classic Beef Chili

A deeply savoury bowl of chili con carne with ground beef, two kinds of beans, and a smoky-spiced tomato base that only gets better as it simmers.

Ingredients
- 2 tbsp vegetable oil
- 2 onion, chopped
- 4 garlic, minced
- 1 red bell pepper, diced
- 800 g ground beef
- 2 tbsp tomato paste
- 2 tbsp chilli powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 800 g canned tomatoes
- 400 g kidney beans, drained
- 400 g black beans, drained
- 5 dl beef stock
- 1 tsp dried oregano
- salt to taste
- black pepper to taste

Method
- 1.
Soften the vegetables — Heat the oil in a large pot and soften the onions and bell pepper for 6 minutes.

Brown the beef — Add the garlic and ground beef and brown, breaking up the meat, for 8 minutes.
- 3.
Bloom the spices — Stir in the tomato paste, chilli powder, cumin, and smoked paprika and cook for 2 minutes.
- 4.
Simmer the chili — Pour in the canned tomatoes, beans, stock, and oregano, season, and simmer gently for 40 minutes, stirring now and then, until thick.
- 5.
Adjust and serve — Taste and adjust the seasoning. Serve with rice, tortillas, or a dollop of sour cream.
