Method

    Butter the baking dish — Preheat the oven to 180°C (350°F). Butter a round baking dish generously.

    Arrange the cherries — Scatter the pitted cherries evenly over the bottom of the prepared dish.

    Whisk eggs and sugar — In a bowl, whisk the eggs with the white sugar until pale and slightly thickened.

    Make the clafoutis batter — Whisk in the flour and salt until smooth, then gradually pour in the milk, melted butter and vanilla extract, whisking until you have a smooth, thin batter.

    Pour batter over the cherries — Pour the batter over the cherries in the dish.

    Bake until golden — Bake for 35–40 minutes, until puffed and golden and a knife inserted in the centre comes out clean.

    Dust with sugar and serve — Let cool slightly, dust with powdered sugar and serve warm or at room temperature.
