Classic Meatloaf

A moist, tender beef loaf bound with herbs and topped with a sweet-tangy ketchup glaze. Nostalgic home cooking at its most satisfying.

Ingredients
- 800 g ground beef
- 1 onion, finely chopped
- 2 garlic, minced
- 80 g breadcrumbs
- 1¼ dl milk
- 2 egg
- 2 tbsp fresh parsley, chopped
- 1 tsp dried thyme
- 4 tbsp ketchup
- 1 tbsp brown sugar
- 1 tsp Dijon mustard
- salt to taste
- black pepper to taste

Method

Soak the breadcrumbs — Heat the oven to 180°C. Soak the breadcrumbs in the milk for 5 minutes.

Mix the meatloaf filling — Mix the beef, onion, garlic, eggs, parsley, thyme, and soaked breadcrumbs. Season well and combine gently without overworking.

Shape and glaze the loaf — Press into a loaf tin. Stir the ketchup, sugar, and mustard together and spread over the top.

Bake the meatloaf — Bake for 60 minutes until firm and cooked through. Rest for 10 minutes before slicing thickly to serve.
