Classic Peach Cobbler

Sweet, spiced peaches bubbling under a golden cakey biscuit topping. A Southern summer classic that begs for a scoop of vanilla ice cream.

Ingredients
- 900 g peach, sliced
- 150 g white sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1 tbsp cornstarch
- 180 g wheat flour
- 2 tsp baking powder
- 80 g white sugar
- 1 pinch salt
- 1¾ dl milk
- 90 g butter, melted

Method

Prepare the peach filling — Heat the oven to 190C. Toss the peaches with the sugar, lemon juice, cinnamon, and cornstarch, then spread them in a baking dish.

Make the cobbler batter — In a bowl, whisk the flour, baking powder, sugar, and salt. Stir in the milk and melted butter until you have a thick, lumpy batter.

Top peaches with batter — Drop spoonfuls of the batter over the peaches, leaving gaps for the fruit to bubble through.

Bake until golden — Bake for about 45 minutes until the topping is golden and the fruit bubbles at the edges. Serve warm with ice cream.
