Classic Poutine with Beef Gravy

Crispy golden french fries smothered in a rich beef gravy and melting cheese curds — the ultimate Canadian comfort food, ready in under 30 minutes.

Ingredients
- 800 g french fries
- 200 g mozzarella, torn into small chunks
- 3 tbsp butter
- 3 tbsp wheat flour
- 5 dl beef stock
- 1 tbsp Worcestershire sauce
- 1 garlic, minced
- 1 tbsp fresh chives, finely chopped
- black pepper to taste
- salt to taste

Method

Cook the fries — Bake or fry the french fries according to package instructions until golden and crisp.

Make the roux — Meanwhile, melt the butter in a saucepan over medium heat and whisk in the flour to form a smooth roux. Cook for 1 minute, stirring constantly.

Simmer the gravy — Gradually whisk in the beef stock, then add the Worcestershire sauce and minced garlic. Simmer, stirring occasionally, until the gravy thickens.

Season the gravy — Season the gravy with salt and black pepper to taste.
- 5.
Top with cheese — Pile the hot fries onto a platter or into bowls, scatter the mozzarella chunks over the top while the fries are still hot so they start to melt.

Pour and serve — Immediately pour the hot gravy generously over the fries and cheese, sprinkle with fresh chives, and serve at once.
