Classic Tahini Hummus

A silky, authentic hummus made from creamy sesame paste, lemon juice and garlic — whipped to a light, cloud-like texture and finished with olive oil and smoked paprika.

Ingredients
- 240 g tahini
- 1¼ dl lemon juice
- 2 garlic, minced
- 1 tsp ground cumin
- salt to taste
- 1¼ dl water, ice-cold
- 2 tbsp olive oil, plus extra for drizzling
- 1 tsp smoked paprika
- 1 tbsp fresh parsley, finely chopped, for garnish
- 1 tbsp pita bread, warmed, for serving

Method

Blend the tahini — In a food processor, combine the sesame paste and lemon juice. Blend for about a minute until the mixture looks pale, thick and slightly seized up.

Season the hummus — Add the garlic, cumin and a generous pinch of salt. Blend again until well combined.

Blend until creamy — With the processor running, slowly stream in the ice-cold water, followed by the olive oil, until the hummus turns light, smooth and creamy.

Adjust and spread — Taste and adjust the salt and lemon juice as needed. Spread onto a plate, swirling a well in the center.
- 5.
Garnish and serve — Drizzle generously with olive oil, sprinkle with smoked paprika and chopped parsley, and serve with warm pita bread.
