Classic Whisked Matcha Tea

The traditional Japanese way to prepare matcha: sifted green tea powder whisked with hot water into a frothy, vibrant, energizing cup.

Ingredients
- 4 g matcha powder
- 5⅓ tbsp water, just off the boil
- white sugar to taste
- 1 ice cube, optional
Method
- 1.
Sift the matcha — Sift the matcha powder into a wide, warmed bowl (a chawan if you have one) to break up any clumps.

Add the hot water — Pour in the hot water (not boiling, about 80°C) and add the sugar if using.
- 3.
Whisk until frothy — Whisk briskly in a W or M motion with a bamboo whisk (or a small hand whisk) until a light foam forms on top, about 30 seconds.
- 4.
Serve hot or over ice — Pour over an ice cube if serving cold, or drink warm right away while the foam is fresh.
