    Fill the pot with meats — Place the beef, pork belly, chourico, morcela and chicken thighs in a very large pot. Cover generously with water and add the onions, garlic, bay leaves and black pepper.

    Simmer the meats — Bring to a boil, skim off any foam, then reduce to a gentle simmer, cover, and cook for 75 minutes until the beef and pork are tender.

    Add the vegetables — Add the carrots and turnips and simmer for 15 minutes, then add the potatoes and cabbage wedges and continue cooking for 15-20 minutes until all the vegetables are tender.

    Plate the meats and vegetables — Lift out the meats and vegetables with a slotted spoon onto a large warmed platter, arranging them by type. Drizzle everything with olive oil and season with a little salt.

    Serve with the broth — Serve the cozido hot with the flavorful broth on the side, traditionally accompanied by rice cooked in some of the cooking liquid.
