Creamy Nutritional Yeast Spaghetti

A quick vegan weeknight pasta where nutritional yeast whisks into a savory, cheese-like sauce with garlic, chilli and lemon zest.

Ingredients
- 350 g spaghetti
- 60 g nutritional yeast
- 3 tbsp olive oil
- 3 garlic, minced
- 1 tsp dried oregano
- ½ tsp chilli flakes
- 2½ dl vegetable stock
- 2 tbsp fresh parsley, finely chopped
- 1 tsp lemon zest
- salt to taste
- black pepper to taste

Method
- 1.
Cook the spaghetti al dente — Bring a large pot of salted water to a boil and cook the spaghetti until al dente, according to package instructions.

Sauté the garlic — While the pasta cooks, warm the olive oil in a large pan over medium heat and sauté the garlic until fragrant, about 1 minute.

Simmer the stock and spices — Add the oregano and chilli flakes to the pan and stir for 30 seconds, then pour in the vegetable stock and bring to a gentle simmer.

Form a silky sauce — Whisk the nutritional yeast into the simmering stock until it forms a smooth, glossy sauce, seasoning with salt and black pepper.
- 5.
Toss pasta into the sauce — Drain the spaghetti, reserving a cup of pasta water, then toss the pasta directly into the sauce, adding splashes of pasta water until glossy and well coated.
- 6.
Finish with parsley and lemon — Stir in the fresh parsley and lemon zest, taste and adjust the seasoning, then serve immediately in warm bowls.
