Creamy Rice Pudding

Short-grain rice slowly simmered in vanilla milk until thick and velvety, sweetened and warmed with cinnamon and plump raisins. Pure comfort in a bowl.

Ingredients
- 150 g arborio rice
- 1 l milk
- 80 g white sugar
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 pinch salt
- 50 g raisins

Method

Start the rice pudding base — Combine the rice, milk, sugar, vanilla, cinnamon, and salt in a heavy saucepan and bring to a gentle simmer.

Simmer until thick and creamy — Cook uncovered over low heat for about 35 minutes, stirring often, until the rice is tender and the milk has thickened to a creamy pudding.

Add the raisins — Stir in the raisins in the last 10 minutes of cooking so they plump up.

Finish and serve the pudding — Serve warm, or chill and loosen with a little milk. Finish with an extra dusting of cinnamon.
