The French café toastie of ham and cheese blanketed in béchamel and grilled until golden. Rich, gooey, and utterly satisfying.

Ingredients
- 4 white bread
- 120 g ham
- 120 g Gouda, grated
- 30 g butter
- 30 g wheat flour
- 3 dl milk
- 1 tsp Dijon mustard
- 1 pinch ground nutmeg
- salt to taste
- black pepper to taste

Method

Make the béchamel — Melt the butter in a small pan, stir in the flour, and cook for 1 minute. Whisk in the milk gradually and simmer for 4 minutes into a thick béchamel. Season with nutmeg, salt, and pepper.

Assemble the sandwiches — Heat the oven to 200°C. Spread mustard on two slices of bread, layer with ham and half the cheese, and top with the remaining bread.

Top with béchamel — Spread the béchamel over the tops of the sandwiches and scatter with the remaining cheese.

Bake until golden — Bake for 10 minutes, then grill for 2 minutes until golden and bubbling. Serve hot.
