Dark Chocolate Truffles

A silky two-ingredient ganache rolled into little balls and dusted in bitter cocoa. Intensely chocolatey, melt-in-the-mouth, and the easiest edible gift there is.

Ingredients
- 300 g dark chocolate, finely chopped
- 2 dl heavy cream
- 30 g butter
- 1 tsp vanilla extract
- 1 pinch salt
- 40 g cocoa powder

Method
- 1.
Melt the chocolate in cream — Place the chopped chocolate in a bowl. Heat the cream until it just begins to steam, then pour it over the chocolate and leave for 2 minutes.

Whisk the ganache smooth — Stir gently from the centre outwards until the ganache is smooth and glossy, then beat in the butter, vanilla, and salt.

Chill until firm — Cover and chill for at least 2 hours until firm enough to scoop.
- 4.
Roll and coat the truffles — Scoop small portions, roll quickly into balls between your palms, then coat in cocoa powder. Keep chilled until serving.
