A savory Brazilian side of toasted cassava flour with crisp bacon, egg, raisins, and parsley, the essential companion to feijoada.

Ingredients
- 3 tbsp butter
- 1 onion, finely chopped
- 3 g bacon, chopped
- 250 g cassava flour
- 2 egg, beaten
- 50 g raisins
- 4 tbsp fresh parsley, chopped
- salt to taste

Method

Cook the bacon and onion — Melt the butter in a large skillet and cook the bacon until crisp, then add the onion and sauté until golden.

Scramble in the eggs — Push the eggs into a clear space in the pan and scramble briefly until just set, then mix through the bacon and onion.

Toast the cassava flour — Sprinkle in the cassava flour gradually, stirring constantly, and toast for 8-10 minutes until golden and toasty.
