Feijão Tropeiro (Brazilian Beans)

A hearty Minas Gerais classic of black beans stir-fried with bacon, sausage, egg, and toasted cassava flour.

Ingredients
- 500 g black beans, cooked and drained
- 4 g bacon, chopped
- 200 g sausage, sliced
- 1 onion, chopped
- 3 garlic, minced
- 3 egg, beaten
- 150 g cassava flour
- 4 tbsp fresh parsley, chopped
- 2 spring onion, sliced
- 2 tbsp vegetable oil
- black pepper to taste
- salt to taste

Method

Crisp the bacon and sausage — Fry the bacon and sausage in a large skillet until crisp and golden, then remove and set aside, leaving the fat behind.

Scramble eggs with onion — In the same fat, sauté the onion and garlic until soft, then scramble in the eggs until just set.

Fold in the black beans — Return the bacon and sausage to the pan, then fold in the cooked black beans, stirring to combine well.

Toast in the cassava flour — Sprinkle in the cassava flour gradually while stirring, toasting for 5 minutes until everything is well coated and fragrant.

Finish and serve warm — Stir in the parsley and scallion, season with black pepper and salt, and serve warm.
