Finnish Salmon Soup

Lohikeitto: a creamy, comforting soup of salmon and potatoes simmered with leek, allspice, and dill. A beloved Finnish classic.

Ingredients
- 500 g salmon fillet, skinned, cubed
- 8 dl fish stock
- 4 dl heavy cream
- 4 potato, peeled and diced
- 1 leek, sliced
- 1 onion, chopped
- 2 tbsp butter
- 1 bay leaf
- 1 tbsp ground allspice, whole
- 3 tbsp fresh dill, chopped
- salt to taste
- white pepper to taste

Method

Sweat the onion and leek — Melt the butter in a large pot and sweat the onion and leek for 5 minutes until soft but not coloured.

Simmer the potatoes in stock — Add the fish stock, potatoes, bay leaf, and allspice berries. Bring to a simmer and cook for 15 minutes until the potatoes are tender.

Poach the salmon in cream — Stir in the cream and bring back to a gentle simmer. Add the salmon cubes and poach for 6-8 minutes until just cooked through.

Season and garnish with dill — Remove the bay leaf, season with salt and white pepper, and stir through most of the dill. Ladle into bowls and top with the remaining dill.
