Four Cheese Pizza

A rich white pizza layering molten mozzarella, tangy gorgonzola, creamy goat cheese and salty Parmesan on a blistered crust.

Ingredients
- 250 g wheat flour
- 1 tsp dry yeast
- 1 tsp salt
- 1 tbsp olive oil
- 200 g mozzarella
- 80 g blue cheese
- 60 g Parmesan
- 80 g goat cheese
- black pepper to taste

Method
- 1.
Make the pizza dough — Mix the flour, yeast and salt, add the oil and about 150 ml warm water and knead to a smooth dough. Cover and rise until doubled, about 1 hour.

Stretch the dough — Heat the oven to its hottest with a tray or stone inside. Stretch the dough into two thin rounds.
- 3.
Top with the cheeses — Tear the mozzarella over the bases, then dot with crumbled gorgonzola and goat cheese and a shower of grated Parmesan.

Bake the pizza — Bake one at a time for 10-12 minutes until bubbling and golden. Finish with a generous grind of black pepper.
