Bacon, sausages, fried eggs, mushrooms, grilled tomatoes, quick homemade beans and buttered toast, cooked in one pan and timed so it all lands hot together.

Ingredients
- 150 g bacon, in thin rashers
- 4 sausage
- 4 egg
- 2 tomato, halved across the middle
- 150 g button mushroom, thickly sliced
- 400 g cannellini beans, drained and rinsed
- 2 dl passata
- 1 tsp brown sugar
- 1 tsp Worcestershire sauce
- ½ tsp smoked paprika
- 4 white bread
- 40 g butter
- 1 tbsp vegetable oil
- ½ tsp salt
- ½ tsp black pepper

Method
- 1.
Make the beans first — Start with the beans, since they wait happily. Simmer the passata with the brown sugar, Worcestershire sauce, smoked paprika and 3 tbsp water in a small pan for 5 minutes, then fold in the cannellini beans and cook 10 minutes more until thick enough to sit in a heap rather than run across the plate. Keep warm.

Start the sausages from cold — Put the sausages into a large cold frying pan with the oil and set it over medium-low heat. Cook for 15 minutes, turning every few minutes, until browned all over and firm to the touch. Starting them cold renders the fat gently and stops the skins splitting.

Fry the bacon in the fat — Move the sausages to a warm plate, turn the heat up and lay the bacon into the rendered fat. Fry for 4 to 5 minutes, turning once, until the fat is translucent and the edges have crisped. Add it to the plate with the sausages.

Brown the mushrooms and tomatoes — Add half the butter to the pan, then the mushrooms and the tomatoes cut side down. Season with the salt and pepper and cook for 6 to 8 minutes, resisting the urge to stir: the mushrooms need to sit still long enough to brown, and the tomatoes should collapse at the edges while holding their shape.

Baste the eggs in butter — Move the mushrooms and tomatoes to the warm plate, wipe the pan, and melt most of the remaining butter over medium-low heat. Fry the eggs for about 3 minutes, spooning the hot butter over the whites until they are set and the yolks are still loose.

Toast the bread and plate up — Toast the bread, spread it with the last of the butter and plate everything at once: bacon and sausages, the eggs, mushrooms and tomatoes, a spoonful of beans held to one side, and the toast propped on the rim.
