General Tso's Chicken

Crunchy fried chicken glazed in a bold sweet-spicy sauce with garlic, ginger, and chilli. The American-Chinese classic everyone orders.

Ingredients
- 600 g chicken thigh, cubed
- 5 tbsp cornstarch
- 4 tbsp vegetable oil
- 4 garlic, minced
- 15 g fresh ginger, grated
- 2 fresh chilli, sliced
- 4 tbsp soy sauce
- 3 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tbsp ketchup
- 1½ dl chicken stock
- 3 spring onion, sliced
- 1 tbsp sesame seeds
- 300 g white rice, to serve

Method

Coat the chicken — Toss the chicken in the cornstarch until well coated. Whisk the soy sauce, sugar, vinegar, ketchup, and stock into a sauce.

Fry the chicken until crisp — Fry the chicken in the hot oil over medium-high heat for 8 minutes until deep golden and crisp. Remove and set aside.
- 3.
Fry the aromatics — Pour off most of the oil, then fry the garlic, ginger, and chillies for 1 minute until fragrant.
- 4.
Toss chicken in the sauce — Pour in the sauce and simmer for 3 minutes until thick and glossy, then return the chicken and toss to coat. Scatter with spring onions and sesame seeds and serve over rice.
