Ginger Beef Stir-Fry

Strips of beef seared fast and tossed with heaps of julienned ginger, garlic, and spring onion in a bright soy glaze. Punchy and ready in minutes.

Ingredients
- 500 g beef steak, sliced thin
- 3 tbsp vegetable oil
- 40 g fresh ginger, julienned
- 4 garlic, minced
- 1 red bell pepper, sliced
- 6 spring onion, cut into batons
- 4 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tbsp cornstarch
- 1 tsp sesame oil
- 300 g white rice, to serve

Method

Prep the beef and sauce — Toss the beef with the cornstarch and 1 tablespoon soy sauce. Whisk the remaining soy sauce, oyster sauce, vinegar, sugar, and 80 ml water into a sauce.

Sear the beef — Sear the beef in the hot oil over high heat for 4 minutes until browned, then push to one side.

Stir-fry the aromatics — Add the ginger, garlic, and pepper and stir-fry for 2 minutes until fragrant and just tender.

Glaze and finish the stir-fry — Pour in the sauce and simmer for 2 minutes until glossy, then fold through the spring onions and drizzle with sesame oil. Serve over rice.
