Greek Pork Souvlaki

Charred, lemony marinated pork skewers wrapped in warm pita with cool tzatziki, tomato and red onion — a classic Greek street food favorite.

Ingredients
- 800 g pork tenderloin, cut into 3 cm cubes
- 4 tbsp olive oil
- 2 lemon, juiced
- 3 garlic, minced
- 2 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 4 pita bread
- 200 g tzatziki
- 1 tomato, sliced
- ½ red onion, thinly sliced

Method

Marinate the pork — In a bowl, whisk the olive oil, lemon juice, garlic, oregano, smoked paprika, salt and pepper. Add the pork cubes and toss to coat well.

Skewer the pork — Cover and marinate in the fridge for at least 1 hour, or overnight for best flavor. Thread the pork onto skewers.

Grill the skewers — Grill the skewers over high heat for 10-12 minutes, turning often, until charred at the edges and cooked through.

Fill the pitas — Warm the pita breads on the grill for a minute. Fill with souvlaki, tzatziki, tomato and red onion, then serve.
