Green Tea Smoked Eggs

Hard-boiled eggs stovetop-smoked over green tea leaves, rice and sugar for a golden, fragrant Chinese-style snack.

Ingredients
- 30 g green tea leaves
- 150 g white rice, uncooked and rinsed
- 150 g white sugar
- 2 tbsp white sugar, for the syrup
- 1 egg white
- 1 pinch salt
- 2 tbsp water

Method
- 1.
Prepare the smoking mixture — Line a wok or heavy pot with foil, then scatter the green tea leaves, uncooked white rice and 150g white sugar over the foil to make the smoking mixture.

Arrange eggs on the rack — Set a wire rack over the mixture and arrange the hard-boiled, peeled eggs on the rack so smoke can reach them from all sides.

Smoke the eggs — Cover tightly and place the wok over medium-high heat until the mixture begins to smoke, then reduce to medium and smoke the eggs, covered, for 10 minutes.

Rest the eggs in smoke — Turn off the heat and let the eggs rest covered in the smoke for another 5 minutes so they take on a deep golden color and tea aroma.

Make the light glaze — Meanwhile, dissolve the extra 2 tablespoons of white sugar with a pinch of salt in 2 tablespoons of water over low heat to make a light glaze.
- 6.
Glaze and serve the eggs — Remove the eggs from the smoker, brush lightly with the warm glaze while still hot, and let cool slightly before halving and serving.
