Grilled Chicken Kebabs

Juicy shish tawook-style chicken cubes marinated in yogurt, garlic and lemon, threaded with peppers and onion, then grilled to smoky perfection.

Ingredients
- 700 g chicken breast, cubed
- 200 g plain yogurt
- 4 garlic, crushed
- 3 tbsp lemon juice
- 2 tsp paprika
- 1 tsp smoked paprika
- 1½ tsp ground cumin
- ½ tsp cayenne pepper
- 3 tbsp olive oil
- 1 red bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1½ tsp salt

Method

Make the marinade — In a large bowl, whisk together the yogurt, garlic, lemon juice, paprika, smoked paprika, cumin, cayenne, olive oil and salt.

Marinate the chicken — Add the cubed chicken to the marinade, stir to coat thoroughly, cover and refrigerate for at least 30 minutes, or overnight for deeper flavor.

Thread the skewers — Thread the marinated chicken onto skewers, alternating with chunks of red bell pepper and red onion.
- 4.
Grill until charred — Grill the skewers over medium-high heat, turning occasionally, for 10-12 minutes until the chicken is charred in spots and cooked through.

Rest and serve — Remove from the grill and let rest for a couple of minutes before serving hot, with extra lemon wedges on the side.
