Method

    Soften the onion — Heat the olive oil in a large pot over medium heat and cook the onion for 4-5 minutes until soft and translucent.

    Bloom the spices — Add the garlic, cumin and cinnamon and cook for 1 minute, stirring, until fragrant.

    Toast the rice — Stir in the rinsed brown rice and toast for 1-2 minutes, coating the grains in the oil and spices.

    Add the stock — Pour in the vegetable stock, add the bay leaf, raisins and a pinch of salt, and bring to a boil.

    Simmer until tender — Reduce the heat to low, cover tightly and simmer for 35-40 minutes, until the rice is tender and the liquid is absorbed.

    Let it rest — Remove from the heat, discard the bay leaf, and let stand covered for 5 minutes.

    Fluff and garnish — Fluff the rice with a fork, fold in the almonds, parsley and mint, season with pepper and serve warm.
