High-Protein Salmon Rice Box

A cold meal-prep box with flaked salmon, white rice, edamame and crisp cucumber in a light soy-sesame dressing. Over 40g of protein to fuel your day.

Ingredients
- 150 g salmon fillet
- 60 g white rice, uncooked
- 100 g cucumber, sliced
- 80 g edamame, shelled
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp rice vinegar
- 1 tsp sesame seeds

Method

Cook and cool the rice — Rinse the white rice and cook it in boiling water until tender, about 12 minutes, then drain and let cool.

Sear and flake the salmon — Season the salmon fillet with a little soy sauce and pan-sear over medium-high heat, about 3 minutes per side, until just cooked through. Let it cool, then flake into large pieces.

Whisk the sesame dressing — Whisk the remaining soy sauce, sesame oil and rice vinegar into a quick dressing.

Assemble the rice box — Pack the cooled rice into a lunch box, top with the salmon, edamame and cucumber, drizzle with the dressing and finish with sesame seeds. Seal and refrigerate until ready to eat.
