Jeyuk Bokkeum Spicy Pork

Thin pork slices marinated in a fiery gochujang and pear glaze, then grilled hot and fast until smoky and caramelised at the edges.

Ingredients
- 700 g pork chop, thinly sliced
- 3 tbsp gochujang
- 1 tbsp gochugaru
- 2 tbsp soy sauce
- 1 tbsp rice wine
- 1 tbsp honey
- 1 pear, grated
- 5 garlic, minced
- 15 g fresh ginger, grated
- 1 tbsp sesame oil
- 1 onion, sliced
- 2 spring onion, sliced
- 1 tbsp sesame seeds

Method

Mix the gochujang marinade — Mix the gochujang, gochugaru, soy sauce, rice wine, honey, grated pear, garlic, ginger, and sesame oil into a marinade.

Marinate the pork — Coat the pork slices and onion in the marinade and let sit for at least 30 minutes.

Grill until charred — Grill the marinated pork and onion over high heat for about 4 minutes per side, in batches, until charred and cooked through.

Slice and serve — Slice into bite-sized pieces, scatter with scallions and sesame seeds, and serve hot.
