Korean Spicy Pork Bulgogi Bowl

Thin pork slices caramelized in a sweet-spicy gochujang glaze, piled into crisp lettuce cups with carrot and scallion.

Ingredients
- 600 g pork tenderloin, thinly sliced
- 3 tbsp gochujang
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey
- 4 garlic, minced
- 1 tsp fresh ginger, grated
- 1 lettuce, leaves separated
- 1 carrot, julienned
- 3 spring onion, sliced
- 1 tsp sesame seeds

Method

Make the gochujang marinade — Whisk together the gochujang, soy sauce, sesame oil, honey, garlic, and ginger to make the marinade.

Marinate the pork — Coat the pork slices in the marinade and let sit for at least 20 minutes, or up to 2 hours refrigerated.

Grill the pork — Grill or pan-sear the pork over high heat in batches for 2-3 minutes per side until caramelized and cooked through.

Fill the lettuce wraps — Fill lettuce leaves with the bulgogi pork, julienned carrot, and scallion. Scatter with sesame seeds and serve.
