Warm, puffy Greek honey doughnuts, fried to golden crispness and drenched in honey syrup with walnuts and cinnamon.

Ingredients
- 300 g wheat flour
- 1 tsp dry yeast
- 1 tsp white sugar
- 3 dl water, lukewarm
- ½ tsp salt
- 1 l vegetable oil, for frying
- 150 g honey
- 5⅓ tbsp water, for syrup
- 1 tsp ground cinnamon
- 50 g walnuts, chopped
- 1 tsp sesame seeds

Method

Make and rise the batter — Whisk the flour, yeast, sugar, salt and lukewarm water in a bowl until smooth. Cover and let rise in a warm place for 1.5 hours until bubbly and doubled.

Drop batter into hot oil — Heat the vegetable oil in a deep pot to 180°C (350°F). Scoop tablespoons of batter (wet your hand or spoon to help it slide off) and carefully drop into the hot oil.

Fry until golden and puffed — Fry in batches for 3-4 minutes, turning often, until deep golden and puffed. Drain on paper towels.

Drizzle with honey syrup — Warm the honey with the water and cinnamon until runny. Drizzle over the warm loukoumades, then scatter with chopped walnuts and sesame seeds before serving.
