Microwave Baked Potato

Fluffy jacket potatoes cooked entirely in the microwave and loaded with butter, cheddar, sour cream and chives. A comforting side ready in under 15 minutes.

Ingredients
- 2 potato, large
- 1 tbsp olive oil
- salt to taste
- black pepper to taste
- 2 tbsp butter
- 4 tbsp cheddar, grated
- 2 tbsp sour cream
- 2 tbsp fresh chives, chopped

Method

Prick the potatoes — Scrub the potatoes clean and pat dry, then prick each one all over several times with a fork to let steam escape.

Rub with oil and season — Rub the potatoes all over with the olive oil and season generously with salt and pepper.

Arrange on a plate — Place the potatoes on a microwave-safe plate, spaced apart, and set them on top of a folded paper towel to absorb moisture.

Microwave until tender — Microwave on high for 5 minutes, then flip the potatoes over and continue microwaving for another 4-5 minutes, until a knife slides easily into the centre.

Rest and fluff — Let the potatoes rest for 2 minutes, since they will be extremely hot inside, then slice each one open lengthwise and fluff the flesh with a fork.
- 6.
Top and serve — Top each potato with butter, grated cheddar, a dollop of sour cream and a scattering of chopped chives, and serve while hot.
