Microwave Banana Mug Bread

Warm, cinnamon-spiced banana bread baked entirely in a mug in the microwave. A quick single-serve treat ready in minutes with no oven needed.

Ingredients
- 1 banana, mashed
- 1 egg
- 2 tbsp vegetable oil
- 2 tbsp brown sugar
- 4 tbsp wheat flour
- ¼ tsp baking powder
- ¼ tsp ground cinnamon
- 1 tbsp walnuts, chopped
- 1 tsp butter, for greasing

Method

Grease the mug — Grease a large microwave-safe mug thoroughly with the butter, coating the base and sides.

Mix the wet ingredients — In the mug, mash the banana well, then whisk in the egg, vegetable oil and brown sugar until smooth.

Fold in flour and walnuts — Stir in the flour, baking powder and cinnamon until just combined, then fold in the chopped walnuts.

Microwave the mug bread — Microwave on high for 90 seconds, checking at the 60-second mark, until the bread has risen and a toothpick-free test (a knife) comes out clean.

Cool and turn out the bread — Let the mug bread cool for a couple of minutes before running a knife around the edge and turning it out, or simply enjoy it warm straight from the mug.
