Microwave Steamed Fish with Ginger

Delicate cod steamed in the microwave with ginger, garlic and soy, finished with sizzling hot oil poured over spring onion. A light, fast Chinese-style dinner.

Ingredients
- 2 g cod fillet
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp fresh ginger, julienned
- 2 garlic, thinly sliced
- 2 spring onion, julienned
- 1 fresh chilli, sliced
- 1 tbsp vegetable oil
- salt to taste

Method

Season the cod fillets — Pat the cod fillets dry, season lightly with salt, and lay them in a single layer in a shallow microwave-safe dish.

Add ginger and seasonings — Scatter the julienned ginger and sliced garlic over and around the fish, then drizzle with the soy sauce, rice vinegar and sesame oil.

Cover the dish — Cover the dish loosely with microwave-safe cling film or a vented lid, leaving a small gap for steam to escape.

Microwave the fish — Microwave on high for 3-4 minutes, until the fish is opaque and flakes easily with a fork, checking at the 3-minute mark to avoid overcooking.

Heat the oil — In a small microwave-safe bowl, heat the vegetable oil for 30-40 seconds on high until just smoking hot.
- 6.
Finish with hot oil — Carefully uncover the fish, top with the julienned spring onion and sliced chili, then pour the hot oil over the top so it sizzles, and serve at once.
