Miso Soup with Tofu and Wakame

A gentle, savoury dashi broth stirred with miso paste, silky tofu cubes, and tender wakame seaweed — quick comfort in a bowl.

Ingredients
- 1 l water
- 1 tsp dashi granules
- 4 tbsp miso paste
- 200 g tofu, cubed
- 2 tbsp wakame, dried
- 2 spring onion, sliced
- 1 tsp mirin
- 1 tsp sesame seeds
- 1 nori sheets, shredded

Method

Simmer the dashi broth — Bring the water to a gentle simmer with the dashi granules for 5 minutes.

Soak the wakame — Soak the dried wakame in a small bowl of warm water for 2 minutes until softened, then drain.

Whisk in the miso paste — Ladle a little hot broth into a bowl, whisk in the miso paste and mirin until smooth, then stir it back into the pot off the heat.

Add the tofu and wakame — Add the tofu and softened wakame to the pot and warm through gently without boiling.
- 5.
Garnish and serve — Ladle into bowls and scatter with sliced spring onion, sesame seeds, and shredded nori to serve.
