Moqueca de Peixe (Brazilian Fish Stew)

A vibrant Bahian fish stew simmered in coconut milk and dende oil with peppers and lime, fragrant and comforting.

Ingredients
- 800 g cod fillet, cut into chunks
- 2 lime, juiced
- 3 garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 tomato, sliced
- 4 dl coconut milk
- 3 tbsp dende oil
- 4 tbsp fresh cilantro, chopped
- 1 fresh chilli, sliced
- 1 tsp paprika
- salt to taste
- black pepper to taste

Method

Marinate the cod — Toss the cod with lime juice, garlic, salt, and black pepper, and let it marinate for 15 minutes.

Layer the vegetables — In a wide pot, layer the onion, bell peppers, and tomato slices over low heat without stirring too much.

Add cod and coconut milk — Nestle the marinated cod on top, then pour over the coconut milk and dende oil. Sprinkle with paprika and sliced chili.

Simmer the fish stew — Cover and simmer gently for 20 minutes until the fish is cooked through and the sauce is fragrant.
- 5.
Garnish with cilantro — Scatter with fresh cilantro and serve hot with white rice.
