Humble Levantine lentils and rice crowned with a mountain of deeply caramelised onions. Cheap, vegan, and endlessly comforting.

Ingredients
- 200 g green lentils
- 200 g basmati rice
- 3 onion, thinly sliced
- 5 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 8 dl water
- salt to taste
- black pepper to taste
- 2 tbsp fresh parsley, chopped
Method
- 1.
Caramelise the onions — Fry the sliced onion in the olive oil over medium heat for 20 minutes, stirring, until deeply caramelised and crisp. Remove two-thirds for the topping.

Simmer the lentils — Add the lentils, cumin, coriander, cinnamon, and water to the pot. Simmer 20 minutes until the lentils are almost tender.

Cook the rice and rest — Stir in the rice and season with salt and pepper. Cover and cook 18 minutes until the rice is fluffy and the water absorbed. Rest, then top with the reserved onions and parsley.
