Nordic Baked Salmon with Dill Butter

A whole salmon fillet roasted under a blanket of dill, lemon, and mustard butter until flaky and glossy. Simple Scandinavian elegance.

Ingredients
- 800 g salmon fillet, in one piece
- 60 g butter, softened
- 3 tbsp fresh dill, chopped
- 1 lemon, zested and juiced
- 1 tbsp Dijon mustard
- 2 garlic, minced
- salt to taste
- white pepper to taste

Method

Season the salmon — Preheat the oven to 200°C (390°F). Place the salmon on a lined baking tray and season with salt and white pepper.

Make the herb butter — Mash the butter with the dill, lemon zest, lemon juice, mustard, and garlic to make a soft herb butter.
- 3.
Top the salmon with butter — Spread the herb butter evenly over the top of the salmon.
- 4.
Bake until flaky — Bake for 16-18 minutes, until the salmon flakes easily and the butter has melted into a glossy glaze.

Slice and serve warm — Slice into portions and serve warm, spooning the buttery pan juices over each piece.
