Nordic Pickled Herring Salad

A classic Scandinavian appetizer of pickled herring layered with tender new potatoes and red onion, finished with a creamy dill dressing.

Ingredients
- 400 g pickled herring, drained and cut into bite-sized pieces
- 2 g new potato, boiled and sliced
- 1 red onion, thinly sliced
- 2 tbsp sour cream
- 1 tbsp plain yogurt
- 1 tbsp fresh dill, chopped, plus extra to garnish
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar
- 1 dash black pepper
- 1 rye bread, to serve

Method

Boil the potatoes — Boil the new potatoes until tender, about 12-15 minutes, then drain and let cool slightly before slicing.

Whisk the dressing — In a small bowl, whisk together the sour cream, yogurt, Dijon mustard and apple cider vinegar until smooth.

Layer the salad — Layer the sliced potatoes, pickled herring and red onion on a serving platter.
- 4.
Garnish and chill — Drizzle the sour cream dressing over the top, sprinkle with chopped dill and black pepper, and serve chilled with rye bread.
