Pan-Seared Salmon

Crisp-skinned salmon basted in garlic butter and finished with lemon and dill. A restaurant-quality fillet in under fifteen minutes.

Ingredients
- 2 g salmon fillet
- 1 tbsp olive oil
- 20 g butter
- 2 garlic, crushed
- 1 lemon
- 1 tbsp fresh dill, chopped
- salt to taste
- black pepper to taste

Method

Season the salmon — Pat the salmon dry and season the skin and flesh with salt and pepper.

Crisp the skin — Heat the oil in a pan over medium-high heat and place the fillets skin-side down. Press gently and cook for 6 minutes until the skin is crisp.

Baste with garlic butter — Flip the fillets, add the butter and garlic, and spoon the foaming butter over the fish for 3 minutes until just cooked.
- 4.
Finish and serve — Squeeze over lemon juice, scatter with dill, and serve immediately.
