Paneer Tikka

Smoky, char-grilled cubes of marinated paneer skewered with bell peppers and onion, a vibrant vegetarian starter bursting with Indian spice.

Ingredients
- 400 g paneer, cubed
- 200 g plain yogurt
- 2 tbsp vegetable oil
- 1 tbsp lemon juice
- 1 tbsp fresh ginger, grated
- 3 garlic, minced
- 1 tsp garam masala
- 1 tsp ground turmeric
- 1 tsp chilli powder
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 tsp salt

Method

Make the marinade — In a bowl, whisk together the yogurt, 1 tbsp vegetable oil, lemon juice, ginger, garlic, garam masala, turmeric, chili powder and salt to make a thick marinade.

Marinate the paneer and veg — Add the paneer cubes, bell peppers and red onion to the marinade and toss gently to coat evenly. Cover and refrigerate for at least 30 minutes.

Thread the skewers — Thread the marinated paneer, peppers and onion alternately onto skewers. Brush the grill grates with the remaining oil.
- 4.
Grill until lightly charred — Grill the skewers over medium-high heat, turning every few minutes, for 10-12 minutes until the paneer and vegetables are lightly charred at the edges.
- 5.
Finish and serve hot — Squeeze a little extra lemon juice over the skewers and serve hot, straight off the grill.
