Pão de Mel (Brazilian Honey Spice Cake)

Soft honey and cinnamon spice cake squares filled with prunes and dipped in dark chocolate, a festive Brazilian treat.

Ingredients
- 300 g wheat flour
- 150 g honey
- 100 g brown sugar
- 1 dl milk
- 2 tbsp butter, melted
- 1 egg
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 pinch ground cloves
- 200 g dark chocolate, melted
- 100 g prunes, chopped

Method

Prep the pan — Preheat the oven to 180°C (350°F) and grease a square baking pan.

Whisk the honey batter — Whisk together the honey, brown sugar, milk, melted butter, and egg until smooth.

Fold in flour and prunes — Fold in the flour, baking powder, cinnamon, and cloves until just combined, then stir in the chopped prunes.

Bake and cool — Pour into the prepared pan and bake for 25 minutes until a skewer comes out clean. Cool completely.

Dip in dark chocolate — Cut into small squares and dip each one in melted dark chocolate, letting the excess drip off before setting on parchment to firm up.
