Pão de Queijo (Brazilian Cheese Bread)

Chewy, cheesy Brazilian cheese bread rolls made with tapioca flour, crisp outside and soft and stretchy inside.

Ingredients
- 500 g tapioca flour
- 2½ dl milk
- 1¼ dl vegetable oil
- 1 tsp salt
- 2 egg
- 250 g Parmesan, grated
- 100 g cheddar, grated
- 1 pinch black pepper
- 1 tsp garlic powder

Method

Boil the milk mixture — In a saucepan, bring the milk, vegetable oil, and salt to a gentle boil.

Form the tapioca dough — Pour the hot mixture over the tapioca flour in a bowl and stir until it forms a sticky, stringy dough.

Knead in eggs and cheese — Let the dough cool slightly, then knead in the eggs, parmesan, cheddar, black pepper, and garlic powder until smooth.

Shape the dough balls — Preheat the oven to 200°C (400°F). Roll the dough into golf-ball-sized balls and place on a lined baking tray.

Bake until golden — Bake for 18-20 minutes until puffed and lightly golden. Serve warm.
